Vanilla Cupcakes with Lemon Cream Cheese Frosting

So this seems to be my most popular cupcake amongst friends and family. A word of warning, they are absolutely fattening, so if you still interested see recipe below :)

Ingredients

1 ½ cups flour
¾ cup sugar
2 tsp baking powder
½ tsp salt
½ cup milk
½ cup oil
2 eggs
1 tsp vanilla essence

If all else fails, use a pre-mix (i maybe even prefer them).

Sift dry ingredients together.
Add wet ingredients to the dry ingredients and beat well until smooth and creamy.
Place paper cups into muffin tin and fill each cup 3/4 full.
Bake for +- 20 minutes at 180° C.
To test you can push a toothpick into your cupcake, if it comes out clean they are ready :)

Now for the yummy part...

To make the icing, you will need the following ingredients:

1 tub plain cream cheese (NOT COTTAGE CHEESE - this will turn very watery once mixed)
About 3 cups of sifted icing sugar (add more for a thicker consistency, less for a "runny" icing)
Couple drops of Vanilla essence
3 Table spoons lemon juice

Now mix them all together and there you have it, the yummiest icing ever :)
