Wedding Cake Pops ♥


Very special friends are getting married this weekend, so for Lyndalls kitchen tea I thought I would try making Wedding Cake pops. Saw them on the Internet. Mine didn't come out as neatly as planned but they still tasted yummy!

For the cake part you need:

un-iced Cake - either buy a sponge cake or make a cake/cupcupcakes.
cream cheese icing (for recipe click here)
cookie cutters (round or square depending what you want your cakes to look like - I used round)

Crumble your cake or cupcakes into a large mixing bowl.
Add a tablespoon of icing to your cake mixture and mix. (I used my hands, its VERY sticky and gross but it works very well)
Keep adding icing until your cake is moist enough to mold into a ball without falling apart.
Roll out all the balls you need. Push your cake balls through your cookie cutters and lay out on a board.
Once all your cakes have been cut, put them in the freezer for a couple of hours until solid. This helps later on when icing your cakes.

Once solid, insert a bamboo stick into your cake shapes (you can see below, I cut a big circle and a small one for a 2 tier wedding cake effect). Stand your cake pops in polystyrene or oasis.



To Ice your cake pops, melt some white chocolate either in a microwave or over a double boiler. Tip: add oil to your chocolate to make it runnier and smoother. If you get your chocolate runny enough, dip your cake pop in the chocolate and let it dry in the polystyrene.

I spread the chocolate on with a butter knife, whatever suits you.

Decorate with sugar roses or any other decorations. I made mine out of white sugar paste( plastic icing) but you can buy them from any baking shop.

Vanilla Cupcakes with Lemon Cream Cheese Frosting

So this seems to be my most popular cupcake amongst friends and family. A word of warning, they are absolutely fattening, so if you still interested see recipe below :)

Ingredients

1 ½ cups flour
¾ cup sugar
2 tsp baking powder
½ tsp salt
½ cup milk
½ cup oil
2 eggs
1 tsp vanilla essence

If all else fails, use a pre-mix (i maybe even prefer them).

Sift dry ingredients together.
Add wet ingredients to the dry ingredients and beat well until smooth and creamy.
Place paper cups into muffin tin and fill each cup 3/4 full.
Bake for +- 20 minutes at 180° C.
To test you can push a toothpick into your cupcake, if it comes out clean they are ready :)

Now for the yummy part...

To make the icing, you will need the following ingredients:

1 tub plain cream cheese (NOT COTTAGE CHEESE - this will turn very watery once mixed)
About 3 cups of sifted icing sugar (add more for a thicker consistency, less for a "runny" icing)
Couple drops of Vanilla essence
3 Table spoons lemon juice

Now mix them all together and there you have it, the yummiest icing ever :)
